Ingredients

  • 1 acorn squash, cut into 1-inch slices, seeds and pulp removed
  • 2 tablespoons oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 400°F.
  2. Toss sliced acorn squash with oil, salt and pepper. Add brown sugar if desired. Arrange in a single layer on a baking sheet.
  3.  Roast the squash for about 25 minutes or until it is easily pierced with a fork. Remove from oven and serve warm.

Reduce Food Waste

Wash the seeds and toast in the oven for 20 minutes or until they are crunchy. Toss with salt and other spices.
