Wrapping a combination of ingredients into a corn tortilla can make any meal creative, fun, portable and affordable.
The formula for this soft taco is a simple one – scrambled eggs, corn, a smoky sauce and a sliver of avocado all wrapped in a corn tortilla.
The key to packing flavor into this filling is the smoky, Adobe sauce which is a canned tomato sauce packed with smoked chilies, also called chipotle chilies. This ingredient comes in a small can but carries big flavors. Used in small amounts, this economical item lasts in the fridge and can transform a dish with its tangy, smoky, dark tones.
Creative additions to this taco are welcome but having the basic formula down is a great step towards Healthy Eating on a Budget.
Ingredients
2 tbs butter or canola oil
12 eggs, beaten
2 cups corn (frozen, canned or fresh)
2 tbs adobe sauce
salt to taste
1 ripe avocado cut into chunks
8 corn tortillas
Heat butter or oil in a large pan over medium heat. Pour eggs into pan and stir. When eggs are cooked add corn, adobe sauce and salt to taste. Remove from heat. Warm the tortillas. Divide filling and scoop onto each tortilla. Add avocado and fold.
If you have the following healthy ingredients on hand or growing in the garden, feel free to add them in!
